Well for starters it's cost effective compared to coaxial. CAT5 cable is approx £40 for 1000ft as opposed to approx £1000 for traditional RGBHV cable of a reasonable quality.
Simplicity, if you have ever crimped or soldered a Bnc connector onto mini coax or you have been tasked with twisting on 64 bnc connectors in the back of an 8x8 RGB matrix switcher, then you will already know the positives for CAT5. CAT5 is easy to terminate, easy to run through conduit, a 1500ft cable length can be carried with one hand. Also we can send a multitude of signals down a single CAT5 (composite, audio, RS232, IR, PC UXGA) using any of the vendors we represent here at True Colours.
Performance we can send high resolution UXGA upto 1500ft with minimal degregation or signal loss.
